Crafted with intention
Every step of Aroshya's process is guided by one principle: honouring the integrity of the ingredient.
Sourcing from Mithila, Bihar
We work directly with farming families in the Darbhanga and Madhubani districts of Bihar — the world's largest makhana-growing region, accounting for over 90% of global production. Direct partnerships mean fair prices for farmers and traceability for every batch.
Harvesting Lotus Seeds
Makhana comes from the seeds of the prickly water lily (Euryale ferox), harvested from shallow ponds and wetlands. Traditionally harvested by hand, this work is skilled and labour-intensive — a craft passed down through generations of Mithila communities.
Sun-Drying & Selection
Harvested seeds are sun-dried before the outer shell is removed. Seeds are then hand-sorted by size and quality — only those meeting our Grade A criteria proceed. Blemished or undersized seeds are returned to local use, ensuring zero waste.
The Pop: Traditional Roasting
The signature puffing of makhana is achieved by heating seeds in a dry iron pan at high temperature — a process that requires skill and timing perfected over generations. The seed expands and the shell cracks away to reveal the fluffy white nut inside. No oil, no additives.
Natural Seasoning (Flavoured Range)
For our flavoured range, we apply seasonings using a light coating of cold-pressed oils and natural spice blends. No artificial flavours, no MSG, no preservatives. Every ingredient is traceable and clearly listed on the pack.
Quality Testing
Each batch undergoes moisture, microbial and sensory checks before packaging. We test for consistency in puff size, crunch and flavour balance. Only batches that pass every checkpoint reach you.
Packaging & Dispatch
Makhana is hygroscopic — it absorbs moisture from the air. Our packs use nitrogen-flushed, food-grade packaging to preserve crunch and freshness without chemical preservatives. Dispatched from Baroda, Gujarat.
Fair trade. Sustainable sourcing. Zero compromise.
We pay above market rates to our farming partners, support sustainable pond management practices, and are working toward formal fair trade certification.
